VariO Icona Hybrid is the combo machine for gelato which was born on the 30th birthday of our iconic Compacta. The machine is simple and easy to use thanks to its intuitive LCD Touch Screen, and its smart interface designed by our Gelato Chefs. The Icona system allows you to switch from one operation to another and to manage and store personalised recipes, preferences and alerts only with a few taps.
HYBRID - Water saving thanks to the combined use of the patented Hybrid condensation system. Save up to 80% of water*
When in Hybrid mode the consumption of water reduces drastically by combining air and water condensation.
SMART extraction - This configuration allows to set the number of gelato trays to extract. Vario Icona will then vary its speed to allow to change trays while warning with an acoustic signals.

VariO Icona Hybrid is the combo machine for Gelato that allows to complete the whole cycle of gelato production. VariO Icona Hybrid is a two-in-one unit; in the upper part there is the boiler, whereas in the lower part there is the horizontal cylinder of the batch freezer.

New tray and carapine holder
A new and practical support ideal for an optimal stabilization of trays and carapine. it is compatible with most of the standard models on the market.
Direct transfer
The mix is transferred to the freezing cylinder through an outer spigot. The independent exit allows to extract high-density products directly from the boiler.
Pasteurization
The “heating icon” will start the cycle, which can be adjusted up to 105°C; the icons are extremely straightforward. An acoustic/visual signal shows that the temperature has been reached.
